The Risk
The primary ignition sources in a commercial kitchen are deep fat fryers and cooking oil at or above auto-ignition temperature, grease-laden vapour accumulating in canopy filters and ductwork, and open flame cooking equipment operating in close proximity to combustible surfaces. A grease fire in a commercial kitchen cannot be suppressed with water. It requires a purpose-designed wet chemical agent that simultaneously knocks down the flame and cools the fuel surface below re-ignition temperature — a process known as saponification. Without this, re-ignition is likely even after an apparently successful suppression event.

Systems are designed to the specific layout and cooking equipment configuration of each kitchen, with detection positioned to respond to the actual ignition risk rather than a generic layout. Automatic fuel and power isolation is integrated into every installation, cutting gas and electricity to cooking equipment on system activation to prevent re-ignition. Installations are completed by SAQCC Fire registered technicians with full commissioning documentation provided on completion.

Why do commercial kitchens need a specialist suppression system?

Does the system shut down the kitchen equipment when it activates?
Yes. Every installation includes automatic fuel and power isolation that cuts gas and electricity to cooking equipment on activation, preventing re-ignition once the suppression agent has been discharged.
